This banana bread is so tasty people won’t even know it is lacking gluten and dairy! With just 10 ingredients, this simple treat reqires no mixer or special equipment, other than a bowl and a spoon! Enjoy!
First things first, preheat the oven to 350° and grease a loaf pan with coconut oil.
Start out by gathering your ingredients together. You will need 2 eggs, 2 ripe bananas, 1/4 cup almond milk, 1/2 cup maple syrup, 1/3 cup coconut oil, 1 tsp. vanilla, 1 tsp. baking soda, 1/2 tsp. cinnamon, 1 3/4 cup flour and a pinch of salt.
Then mix the wet ingredients (egg, banana, almond milk, maple syrup, coconut oil, vanilla) and dry ingredients (baking soda, cinnamon, flour, salt) in separate bowls until well combined.
Next add the dry ingredients into the wet ingredients, mixing slowly to fully incorporate. The batter should be slightly lumpy and thick.
Finally, pour the batter into the prepared loaf pan. Sprinkle cinnamon on top and swirl using a toothpick. Bake for 45-55 minutes.
